Ufa student-process specialist invented bread recipe with triticale

The Agrarian University takes out a patent on a recipe of bread with triticale bran. An artificial hybrid of wheat and rye, despite its recognized beneficial properties, is still not widely used in baking due to the lack of food technology.
A student Ilgiza Yakupova with her teacher Elena Koshina began working with triticale as part of a project for a scientific conference and eventually created a product that can be made industrially. Their crispbread "Student" was repeatedly exhibited at All-Russian exhibitions and received gold and silver medals.
As the press service of Bashkir State Agrarian University informs, the future food technology specialist tried dozens of different ways of making bread from triticale bran. As a result, she managed to find the optimal combination of ingredients so that the product was both tasty and healthy.
After the patent is filed, the university will be ready to provide the recipe for bakeries and bread-baking plants. It is assumed that the bread will be in demand by buyers seeking a healthy lifestyle.
“Triticale has the best properties of wheat and rye. It is not inferior in nutritional properties to corn. You can get very good bread from triticale, you just need slightly different technology, and this work is ongoing”, commented on Anvar Shakirzyanov, breeder and deputy director of Bashkir Research Institute of Agriculture.
