The motherland of black caviar is in Bashkortostan now

The Karmanosvky fish farm produces 800-1000 kilograms of delicacy black caviar per year and this is one of the most substantial volumes in production of this valuable product in Russia.

Ten enterprises produce black caviar in Russia for today: the fish farm “Diana” (Vologda region – 7,5 tons annually), “Beluga” (Astrakhan – two tons), “RASKAT” (Astrakhan – 1,2 tons), Karmanovsky fish farm (Bashkortostan -900kg), Kaluga sturgeon fish farm (Kaluga region – 200 kg) and some others (the information is given on the first half of 2010).

At that this is only a part of the farm’s accompanying output because its main activity is fish farming and surpluses of caviar, left after fish reproduction, are sold out.

Every year the Bashkir farm produces 100-120 tons of sturgeon, 100 tons of trout and 40 tons of cat-fish.

“Production of caviar is just one type of our activity” – the director of the fish farm Igor Armyaninov tells to “Bashinform” – “We have the herd of 12 sorts of sturgeon. The major part of the caviar is meant for reproduction and its surpluses are strained off, salted and send for sale”.

The enterprise has all necessary quality certificates and not just the Russian ones. Thus, local specialists has inculcated the quality control on every production stage according to the international food quality standard HAASP and thanks to that Bashkir caviar meets high demand not only here but in Moscow and Saint-Petersburg. The cost of one kilogram of this delicacy, produced in Bashkiria, varies between 20 and 27 thousand rubles. The standard can is available at the shops at 1400 rubles.

At present time the perfection of caviar sales is the main care of the farm’s specialists because the existing sales ways are too cost-is-no-object, taking 30-40% of the overall farm’s expenses.
